The Angus Reserve DelMonico Ribeye steaks are cut from only the eye of the rib.  The entire lip is removed and the belly, or rib finger, side of the loin and tightly trimmed.  Our standard cut is 10 oz.  USDA Grade: Prime plus the top ⅓ of Choice for abundant marbling that enhances both flavor and juiciness.
